Satay Pizza

Prepare your taste buds for a flavour explosion with our Satay Pizza! Picture this: a crispy, golden crust topped with creamy peanut sauce, tender chicken or tofu, vibrant veggies, and a sprinkle of fresh herbs. Each bite is a harmonious blend of sweet, savoury, and spicy flavours that will transport you to foodie heaven. Whether you're hosting a pizza night with friends or treating yourself to a solo dinner, this Satay Pizza is guaranteed to impress.

Ingredients:

  • 4 flatbread
  • 4 cups baby spinach
  • 150 g green beans ends trimmed and cut in thirds
  • 4 sprigs spring onion(s) sliced
  • 4 free range egg(s)
  • 100 g cheddar (or tasty) cheese grated
  • 2 cups basil (fresh) leaves
  • 4 tablespoons Greek yoghurt

Ingredients for Satay Sauce

  • 100 ml coconut cream
  • 2 tablespoons Mayver's peanut butter (crunchy)
  • 1/2 teaspoon coriander (ground)
  • 1 pinch cumin (ground)
  • sea salt to taste
  • 1/2 teaspoon turmeric (ground or fresh)

Method:

  1. Preheat a fan-forced oven to 180°C/350°F/Gas Mark 4.
  2. To make the satay sauce, combine all ingredients in a small saucepan and bring to a boil over medium heat. Reduce heat to low and cook sauce for 10 minutes, stirring occasionally until the sauce has cooked down and thickened.
  3. Lay out your flatbreads on top of two large baking trays. Spread Satay Sauce over the flatbreads, and then sprinkle over the spinach, green beans and spring onions.
  4. Carefully crack an egg in the middle of each flatbread and sprinkle over cheese.
  5. Place flatbreads in the oven and bake for 15-20 minutes, until the egg has set and the flatbread is golden brown.
  6. Sprinkle the flatbreads with basil leaves and a dollop of yoghurt to serve.

Sweet Potato Brownies

These decadent treats are made with wholesome ingredients like sweet potatoes, almond flour, and dark chocolate, making them rich in flavour and nutrients. Each fudgy, chocolatey bite is a celebration of deliciousness that will satisfy your cravings and leave you feeling energised. Whether you enjoy them as a dessert, snack, or even breakfast (we won't judge!), our Sweet Potato Brownies are sure to become a household favourite.

Ingredients:

  • Oil or butter, for greasing
  • 3 tablespoons coconut flour
  • 2 tablespoons raw cacao powder
  • 1/2 teaspoon vanilla powder
  • 1/4 teaspoon gluten-free baking powder
  • 1/4 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1 scoop vanilla protein powder (optional)
  • 50 g dark (85% cacao) chocolate, chopped
  • 1 cup sweet potato puree or 1 large sweet potato, cooked in the oven until soft, skin removed
  • 3 eggs, whisked
  • 1/4 cup coconut oil
  • 1/3 cup rice malt syrup

Method:

  1. Grease the slow cooker insert, line with baking paper so that it reaches halfway up the sides.
  2. Combine dry ingredients. In a separate bowl add all the wet ingredients including sweet potato flesh and whisk.
  3. Stir in dry ingredients and mix well. Pour into lined slow cooker and spread evenly.
  4. Cover and cook on low for 2 hours or high for 1 hour. Remove lid and cook for a further 30 minutes or until a skewer comes out clean.

Thai Green Curry Ramen

Spice up your dinner routine with our Thai Green Curry Ramen! This flavourful dish combines the aromatic spices of Thai green curry with the comforting goodness of ramen noodles for a meal that's both comforting and exotic. Tender chicken or tofu, crisp veggies, and silky noodles are simmered in a fragrant broth infused with coconut milk, lemongrass, and fresh herbs. With each slurp, you'll be transported to the bustling streets of Bangkok, where bold flavours and vibrant colours reign supreme.

Ingredients:

  • 4 free range eggs
  • 1 tablespoon coconut oil (extra virgin)
  • 1.5 tablespoons tamari (or soy sauce)
  • 2 teaspoons sesame oil
  • 200 g soba (or gluten free buckwheat) noodles
  • 200 g mushrooms (cup or button), finely sliced
  • 4 cups kale, destemmed and finely shredded
  • 4 pak choy chopped
  • 4 sprigs spring onion(s) finely chopped
  • 1 lime to serve

Ingredients for Curry Paste

  • 1 tablespoon coriander seeds
  • 1 teaspoon cumin, seeds
  • 1 chilli (red) sliced in half and seeds removed (keep half the seeds in if you prefer it spicy)
  • 2 teaspoons ginger (fresh) minced
  • 2 cloves garlic
  • 1 bunch coriander (fresh) leaves and stalks, roughly chopped
  • 1 lime zest and juice
  • 3 sprigs spring onion(s)
  • 1/2 teaspoon black pepper (ground)
  • 1.5 tablespoons tamari
  • 1.5 tablespoons olive oil (extra virgin)

Method:

  1. To make the curry paste, heat a frypan on a low to medium heat and add the coriander and cumin seeds. Toast for a few minutes until spices are fragrant.
  2. Tip spices into a food processor or blender, along with the rest of the ingredients.
  3. Blitz until it forms a smooth paste. Set aside.
  4. Bring a saucepan of water to a gentle boil. Carefully add the eggs and cook for 7 minutes. Drain and plunge eggs into cold water to stop the cooking process. Set aside for serving.
  5. Heat coconut oil in a large saucepan and add the Thai Green Curry Paste. Cook for 1 minute until fragrant, then add the tamari, sesame oil, 1500ml water and noodles and cook for 8 minutes, until noodles are cooked to your liking.
  6. Add in the mushrooms, kale and pak choy in the last minute to heat through.
  7. Ladle the ramen into 4 bowls. Peel boiled eggs and cut in half. Place two halves in each ramen and top with spring onions and dress with lime wedges to serve.
